As with champagne, some teas must be grown and produced in a certain region in order to be considered authentic. True Longjing comes from Zhejiang province, with the choicest crop coming from Lion’s Peak Mountain in the West Lake region of Hangzhou, the capitol city.
It’s here that 18 tea bushes were granted Imperial status during the Qing dynasty. They still survive today, and the tea processed from them sells for more per gram than gold.
Our Longjing is guaranteed authentic, and features the characteristic chestnut aroma and lingering taste it’s known for.
What we're doing:
- 1 heaping tablespoon (about 3 grams) of Longjing per 6-8 oz serving
- Heat fresh water to 170º-175ºF
- Steeped 1-2 minutes
- Multiple infusions
What we're tasting:
- Nutty – Chestnut
- Umami - Miso
