It may sound odd, but this extraordinary tea's signature flavor is developed with the help of leafhoppers. These small insects nibble the stems and leaf edges of the plant, which in turn causes the production of organic chemicals that give this tea its sweetness.
Unsurprisingly, Dongfang Meiren is Taiwan's most famous oolong and is celebrated worldwide. Even Queen Victoria became enamored with this "Oriental Beauty," as she named it, after tasting its warm toast and jam character, fruity aroma, and light floral notes.
What we’re doing:
- One heaping teaspoon (about 3 grams) of Dongfang Meiren per 6-8 oz serving
- Heat fresh water to 175º-185ºF
- Steep 2-4 minutes
- Multiple infusions
