Considered to be the benchmark for steamed teas, Sencha is Japan’s most popular variety, accounting for approximately 80% of the country’s tea production.

 Based on water temperature and brewing time, Sencha can display a variety of flavor qualities, ranging from spritely, bitter, and mineral in character, to mellow, sweet, and grassy.  

What we're doing:

• 1 heaping teaspoon (about 3 grams) of Sencha per 6-8 oz serving
• Heat fresh water to 165-175ºF
• Steep 1-2 minutes
• Multiple infusions

 What we're tasting:

• Vegetal – Hay/straw
• Mineral – Nori
• Sweet – Clover honey
